Introduction

At the end of the summer, when the tomatoes are ripening too slowly or not evenly, or going bad too quickly, I'll stew them to use as a sauce, salsa or just a side dish. Works with green tomatoes, too. The meatier the type of tomato, the better, but any kind will do. Ingredients

    14 oz. fresh tomatoes, chopped
    small onion, chopped
    1 tsp minced garlic
    1-2 Tbsp olive oil
    1 tsp fennel seed
    tsp oregano
    10-12 leaves basil
    If using green or half ripe tomatoes, add about 1 Tbsp brown sugar (to taste), to cut the acid.

Directions

Saute chopped onion and garlic in olive oil until the onion begins to brown. Add chopped tomato and herbs. Put a lid on it and let simmer at least 15 minutes, until tomatoes are soft. Taste. If not sweet enough, stir in Tbsp brown sugar. Let simmer at least another 10 minutes. If very watery, take lid off and let some of the liquid steam off.

Makes about 16 oz. Nutrition info is for 1 ounce and includes brown sugar.
