Introduction

Very tasty salad as a side, or a lite lunch Very tasty salad as a side, or a lite lunch

Ingredients

    12 oz package of frozen blackeyed peas - thawed
    1 onion
    2 red tomatoes, or 1 red, and 1 green tomato
    1 small, firm Avacado appr 1 oz
    1 jalepeno or chili pepper, diced very small
    any other fresh raw veggies as desired
    garlic to taste
    salt and pepper, other seasonings to taste

Directions

Thaw blackeyed peas
dice all veggies, mix until well blended
add favorite seasonings (I use garlic salt, lemon pepper and greek seasoning)
If low sodium desired, substitute fresh garlic
