Ingredients

    2 T butter, softened
    1/8 t paprika
    A grating of nutmeg
    2 pounds haddock, tilapia, or other white-fleshed fish fillets
    2 T white wine
    3 T butter
    1 t chopped parsley
    1 t chopped chives
    2 t fresh lemon juice
    Salt and pepper to taste

Directions

Cooking time depends on the shape of the fillets. Preheat oven to 350*F. Combine 2T butter, softened, paprika, nutmeg. Rub the mixture over: 2 pounds fish. Place fish in a baking dish. Cover tightly with a lid of aluminum foil and bake until firm and opaque throughout, 20-25 minutes. You may add wine while cooking.
Place the fish on a hot platter and keep warm. Saute in a small saucepan: 3 T butter. Add parsley, chives, lemon juice, salt and pepper. Pour the sauce over the fish.
