Ingredients

2 15-oz cans black beans (1 can drained, 1 can undrained)
1/2 cup all-fruit Apple Butter (See note*)
1 tablespoon molasses
1 tablespoon brown grainy mustard
1 tablespoon balsamic vinegar
1/2 teaspoon liquid smoke
1/2 teaspoon salt
Freshly ground pepper to taste
1/2 cup chopped onion
*Note: I prefer Whole Earth All Natural Tap'n Apple, Apple Butter Spread - It is made from only apples and apple cider.
Directions
Turn oven to 350. Drain one can of black beans and put the beans into a casserole dish. Add the other can of black beans with the liquid. Then add all the remaining ingredients except the onion, and stir well. Then saute the onion in a non stick pan sprayed with non-stick spray. Cook onion until lightly browned. You may need to add small amounts of water from time to time as you cook it. Then add the cooked onion to the bean mixture in the casserole dish. Stir well and cook uncovered in the oven for about 1-1/2 hours. Check and stir after cooking for a little over an hour to make sure there is enough liquid -- you may need to add a little water.
This makes 6 servings of 1/2 cup each. I like to serve this with baked sweet potatoes and saurkraut for a hearty vegan meal.
