Ingredients

    Two Bone-In, Skin-On Chicken Breasts
    1 tbsp earth balance margarine (or butter)
    1 tbsp olive oil
    2 tsp salt
    1 tsp pepper or Mrs. Dash seasoning
    2 medium yellow onions, rough chopped
    2 cups red wine (I used Merlot, but your favorite drinking red wine will do)
    2 cups low sodium organic chicken broth
    1/2 can tomato paste

Directions

Rinse and pat dry chicken breasts. Season with salt & pepper. Heat oil and butter in large fry pan, dutch oven or stock pot. Place chicken in oil face down and cook on medium-high heat until breasts are brown (almost carmelized 15-20 minutes). Add chopped onions and allow them to carmelize, about another 20 minutes. At this point there should be a lot of yummy brown goodness on the bottom of the pan from the chicken and onions. Pour red wine over chicken and onions and deglaze the pan. Then add chicken broth. Stir everything and cover. Let simmer for about 1 hr. Remove chicken breasts and set aside on a plate, whisk tomato paste into wine mixture and replace chicken breasts (breast down) into sauce. Cover and simmer on LOW for at least 30 minutes (the longer the better, but on VERY low heat). Serve over rice or mashed potatoes.
