Homemade baked meatloaf. Homemade baked meatloaf.Number of Servings: 6
Ingredients

2 tsp Salt
2.5 tsp Pepper, black (yes, don't scrimp, this is the secret)
1 large Onion finely chopped
3 cloves Garlic
2 large green bell peppers finely diced
32 oz Ground Beef 85% Lean
2 15oz. cans of Hunts tomato sauce
1/2 -3/4 cup saltine cracker crumbs finely ground in blender
3 large Egg, fresh, whole, raw
Directions
Preheat oven to 400 degrees.
Combine all ingredients except cracker crumbs and tomato sauce in mixer mixing bowl. I use the paddle attachment on my kitchenaid. Mix on low (#3) for 2 minutes. Add i/2 cup of cracker crumbs and mix 1 minute on mixer. Add more cracker crumbs if needed. Should be the consistency of like paydoh. Dump in to a baking pan and hand knead if needed. Then shape into a loaf about 3 inches thick and even all the way around. put in oven and bake 35 minutes. Remove from oven and reduce oven to 325 degrees. Pour 1 can of tomato sauce over meatloaf and 1/2 can of water in the pan around the meatloaf. Cover and put in the over for 2 hours, yes 2 hours. After 2 hours remove from the oven and pour the remain can of tomato sauce and water on the meatloaf as in the earlier step. Bake uncovered for 40 minutes. Remove from oven and let rest for at least 20 minutes before slicing. Slice and enjoy. If you like extra sauce, add extra tomato sauce when you add the last can of sauce. I slice the leftovers and put a little sauce on them and put in the freezer. Makes great sandwiches.

I LOVE this recipe!! Thanks so much for sharing; it will be my only meatloaf recipe from now on. Oh...you add the first "8" ingredients by hand...not the first "6". :o) - 8/5/09
