Ingredients

About 6 cups of pupmkin, with seed removed (I used 2 pumpkins)
approx 1 tbsp salt (add to taste)
1 tbsp pepper
2 onions, chopped fine
three medium potatos, peeled & chopped fine
2 tbsp butter
1 tbsp ground ginger
1 tsp ground nutmeg
3 tsp of Hot Sauce (your choice)
2 packages of chicken boullion
1 cup of half & half cream (can use milk)
Directions
Makes approx 20 - 1 cup servings
Put the pumpkin goop into enough water to cover it (approx 1 gallon), and let it boil. Add salt. Once it has boiled for 1/2 hour, strain the pumpkin out of the water - keep the water. Puree the pumpkin in blender, and add back to the water.
Simmer. In the meantime, saute the onions and potatos in butter until onions are golden. Add to the pumkin mix. And then add ginger, nutmeg, pepper, hot sauce, and boullion.
Let simmer about 30 minutes.
Remove from heat, and add cream just before serving.
