Number of Servings: 6

Ingredients

    1/2 cup milk (Archer Farms Skim Milk)
    2 tablespoons butter (Fleischmann's Olive Oil Spread w/ Sea Salt)
    1 tablespoon cornstarch
    1/2 tablespoon White Wine Vinegar
    1/4 cup Egg Beaters Original (recipes typically call for 1 egg yolk, but this saves you on cholesterol)

    dash of cayenne pepper, black pepper, paprika

Directions

Makes about 6 2-tablespoon servings.

Cook milk, cornstarch, and butter in a saucepan on low heat for about 3-5 minutes, until butter is melted and sauce thickens a little. Stir in egg beaters and vinegar and continue to cook for another minute or two. Pour over eggs (or veggies, or other foods), then lightly season with cayenne pepper, black pepper, and paprika.

    Mock hollandaise is a tricky beast but this is a great version. I used 2 egg white and 1 egg yolk plus upped the cayenne and used lemon instead of vinegar. The underlying white sauce is bland so spice really takes the flavour up a notch. - 10/19/12
