Ingredients

    -1 pound of lean ground beef
    -2 cups (1 can) stewed tomatoes
    -garlic, salt, pepper, oregano, basil, and any other desired seasonings
    -1/2 cup red wine
    -2 cups chopped eggplant (1 medium size eggplant)
    -1 cup chopped portobello mushrooms
    -3 cups gnocchi (generally 1 package fresh), cooked according to package directions

Directions

In a large pan, sprayed with an olive oil aerosol product (PAM makes a good one), brown the ground beef along with the garlic over medium-high heat. When the beef is still a little pink, add the eggplant and mushrooms and cook, stirring frequently, until both begin to give up their juices (about 3-5 minutes). Add the red wine and allow to boil away for about 1 minute.

Add the tomatoes and spices, bring to a low boil, then reduce the heat and simmer for 10-15 minutes. Remove from heat, add the cooked gnocchi, and serve.
