Introduction

Quick, tomato-y Quick, tomato-y
Number of Servings: 12

Ingredients

    4 onions, sliced
    3 cloves of garlic, smashed and sliced
    .25 c olive oil
    2 28-oz cans of Muir Glen tomatoes
    7 oz white wine
    18 oz cod (or haddock)

Directions

1 cup = 1 serving
Heat olive oil in big pot, Add sliced onions and cook until soft.
Add garlic and cook another 5 minutes.
Add tomatoes and wine. Heat to low boil.
Add cod (broken up into a few big pieces).
Turn heat down to gentle simmer and cook for 20 minutes (or until fish is done),
Tastes better the next day.
