Introduction

This is a yummy vegetarian sandwich that takes just a couple of minutes to make and tastes so good! This is a yummy vegetarian sandwich that takes just a couple of minutes to make and tastes so good!
Number of Servings: 1

Ingredients

    - 2 slices of bread (preferably whole wheat)
    - Your favorite hummus - I used Athenos Spinach & Artichoke hummus, but any kind will work.
    - Your favorite chunky salsa or pico de gallo
    - Fresh cilantro
    - Your favorite cheese (I used feta cheese, but again, any kind will work).


Directions

Spread hummus on one piece of bread, and chunky salsa on the other.

Wash cilantro and tear it into small pieces.

Sprinkle cilantro and cheese on top of the salsa.

Then put the pieces together and you're done!

Makes 1 sandwich.

For a different version of this sandwich, you can substitute fresh chopped tomatoes and mushrooms instead of cheese. This version would be lower calorie, lower fat, and vegan.
