Ingredients

    1 c. Chopped Onion
    1/2 c.Chopped Celery
    1 clove minced garic
    2 TBL EVOO
    1 28oz. Can Crushed Tomato with Basil
    4 c. Chicken Broth
    1/2 c. Fat Free Half and Half
    1/2 c. Lentils
    1 10oz pkg Frozen Spinach

Directions

Saute onion, celery and garlic in olive oil until soft. Add the rest of the ingredients. Bring to simmer. Simmer 20-30 minutes or until lentils are cooked. Makes 6 hearty portions.
