Introduction

Ingredients

    3 Chicken Breasts
    2 Cans Black Beans
    2 Cans Chicken Broth
    2 Cans Rotel (any desired heat)
    1 Onion, Diced
    1 Red Pepper, Diced (Or 1 Can Corn Niblets)
    Emeril's Southwest Seasoning to Taste

    Sour Cream and Cheese, Optional

Directions

Place all ingredients in a crockpot on Low for 6 hours, or High for 4 hours. Shred the chicken with 2 forks before serving. Add sour cream or cheese if you want. It's that easy!! And a crowd pleaser, too! You can either eat it as a soup, or use a slotted spoon to dish it over tortillas and make pseudo-enchiladas by then sprinkling with cheese. SOOO Delicious!

Makes about 8 servings. Great as leftovers, too! Also freezes nicely!

    i added chopped onion, green pepper, extra black beans and cumin - and it came out great. Like a stew - not too much broth - which gave it more substance and made it more filling. I'll make it again! - 2/26/10

    Incredible!
    I use cumin, chili powder & garlic powder in place of Emeril's. I do add corn, a can of chick peas puried to thicken & chicken broth. - 12/13/09
