Ingredients

    10 oz Tortellini (fresh or frozen)
    1/2 Tbsp Extra Virgin Olive Oil
    1/2 cup coarsely chopped Yellow Bell Pepper
    1 can (19 oz) Red Kidney Beans, drained, rinsed
    3 cups Diced Tomatoes, undrained
    2 Tbsp chili sauce (I used Frank's RedHot Original)
    2 Tbsp basil or parsley (calculated with basil)

Directions

1. Cook and drain tortellini as directed on package.
2. Meanwhile, heat oil in 12-inch nonstick skillet over medium-high heat. Add bell pepper; cook 2 to 3 minutes, stirring frequently, until crisp-tender.
3. Stir in beans, tomatoes, and chili sauce. Cook 4 to 5 minutes over medium heat, stirring occasionally, until thoroughly heated. Stir in tortellini. Sprinkle with basil or parsley.
4. Add some Parmesan cheese and serve. *cheese is not calculated

Makes 5 1-cup servings.

    Very Good
    It was good but we felt like it was missing.....something. We couldn't quite figure out what.

    Tried again... the first time i left out the hot sauce because I'm not a big fan of hot sauce. This time I put it in and it made a difference and it wasn't spicy, it just gave it flavor.

    Incredible!
