Ingredients

Red Potatoes (4 Pounds)
Light Sour Cream (2 Cups)
Gouda Cheese (or any sort of fondant cheese) 4 ounces or 1 cup, grated
Country Crock (4 Tablespoons)
Salt to taste
A tablespoon or so of skim milk if you find it's getting a little too dry.
Boil the potatoes till they are very tender (to the point of where the fork slides in easily and the potatoes are starting to fall apart), add these to a pot slowly, mixing in some sour cream. While still hot, add in your cheese and margarine. Slowly add in more potatoes and sour cream until thoroughly mixed. If you have a whip option, whip the mixture while adding in some salt to taste (optional) and a small teaspoon or tablesoon or milk if you find it's a little too dry. This should not be an issue since these are quite creamy.
