Ingredients

Healthy One Smoked Turkey Sausage, 7 serving (1 whole sausage)
Onions, raw, 1 medium (2-1/2" dia)
Green Peppers (bell peppers), 0.33 cup, chopped
Peppers, sweet, red, fresh, 1 medium, chopped
Garlic, 6 cloves, chopped
Olive Oil, 2 tbsp
Beans, red kidney, 2 cups
Carrots, raw, 5 carrots (cut into bite-sized pieces)
Organic Brown Basmati Rice, 2.25 cups (3/4 cup uncooked)
Del Monte Organic Diced Tomatoes, 14.5 oz
Directions
Cut both sausages into 8 even portions, then cot each in half lengthwise. Broil the sausages to brown them on all sides. Remove from the oven and set aside. Now preheat to 350.
In a large ovenproof saucepan with a lid, brown the chopped vegetables in half of the olive oil. Add the rest of the olive oil and the rice. Add salt and any other seasoning to your own taste. I add one envelope each of Goya Jamon and Sazon. These have tons of flavor, but add no nutritional value. Stir the seasonings and the rice for 5 minutes.
Add the tomatoes, beans 1.5 cups water and stir again.
Place the sausages on top, cover and place into the hot oven for approximately 30 minutes or until the rice is cooked.
Serve with lettuce and tomato.
This makes 4 dinner servings.
