Ingredients

    2 oz grilled chicken, chopped (after-cooking/thawing weight - chicken will weigh more when frozen)
    1/4 cup red bell pepper, chopped
    1/4 cup green bell pepper, chopped
    1/4 cup onion, chopped
    1/4 cup Mexican blend cheese, shredded
    1 medium soft-taco Mission Whole-wheat tortilla

Directions

If chicken is cold/frozen, heat per manufacturer instructions.
Chop chicken, peppers, onions.
Place chicken, onion, peppers in skillet coated with cooking spray, heated to medium-high heat. Stir-fry until vegetables reach desired tenderness. For blackened "grill" look, allow ingredients to sit in a single layer for about 1 minute before stirring. Remove ingredients from skillet.
Place tortilla in skillet. Place cheese over one half of tortilla. Place chicken, peppers and onions on other half of tortilla. Allow cheese to melt, then flip cheese side of tortilla over chicken side of tortilla and press together with spatula. Slide Quesadilla onto plate, cut in half and enjoy!
Serves 1, or can be shared.
