Introduction

Wonderful compliment to turkey or pork.

Note: Soaking the raisins for several hours or overnight in either juice or rum adds a nice flavor. Also, original recipe called for sugar. I have made it using just regular Splenda, and I have made it using Splenda blend. To clarify, 1 cup of Splenda blend is equal to 2 cups sugar.

Ingredients

    1 cup water
    4 cups fresh or frozen cranberries
    1/2 cup dark raisins
    1/2 cup golden raisins
    1 cup Splenda blend (or 2 cups regular sugar)
    1 tsp ground ginger
    1 tsp cinnamon
    1/2 tsp ground allspice
    1/2 tsp salt
    16 oz crushed pineapple, drained

Directions

Place all ingredients in electric pressure cooker. Seal cooker, bring up to high pressure and cook for 2 minutes. Remove from heat. Partially release pressure via Quick Method and allow remaining pressure to reduce naturally. Remove chutney from cooker and cooll to room temperature. Refrigerate until ready to serve.
