Ingredients

3 sheets of rice paper (20 cm/8in diameter)
1/4C lettuce, shredded
1/4C cucumber julienned
1/4C carrot julienned
1/4C bean sprouts (ends removed)
fresh basil
fresh mint
fresh coriander leaves
30 g rice vermicelli, boiled quickly in water
30 g boneless pork, boiled and thinly sliced
6 medium prawns, steamed and peeled
Directions
Soften the sheets of rice paper by lightly brushing each with warm water.
When softened, after about 20 seconds, fold in about 2.5cm/1in in on the two opposite sides and the top.
For each roll, place some shredded lettuce, carrot, cucumber, a few beansprouts, herbs, and a little vermicelli in the center of the sheet. Add some pork and 2 prawns, and roll up.
Serves one.

Wow!!! This sounds like a delish recipe and I cannot wait to try it as I have been looking for a good recipe to try my rice paper with.
