Introduction
Anyone can whip up this deliciously moist fruit cake, it's so simple and with no eggs, butter or sugar. It doesn't even require a mixer to prepare. Just soak, mix and bake. Ingredients

500g mixed dried fruit.
1 cup of apricot nectar.
1 teaspoon honey.
1 cup of cold mashed pumpkin. (cooked)
1 3/4 cup od sifted selfraising flour with
1 teaspoon of bi-carbonate soda and
1 teaspoon of mixed spice
whole nuts to decorate, optional.
Directions
*Place dried fruit, nectar and honey in a large bowl, stir to combine. Cover and allow to stand for 1 hour. ( I stir it through every 20 min)
*Preheat oven to a moderate 180C
line the base and sides of a 20 cm round cake panwith baking paper.
*Stir pumpkin into the fruit and mix to combine.
Add sifted self-raising flour mixture and stir well.
Pour mixture into prepared pan and level the surface.
Decorate with whole nuts.
*Bake for 75 minutes or until skewer inserted comes out clean and the top is golden.Cover with foil if the cake becomes too dark. Wrap in a teatowel and allow to cool in the pan.
Store in an airtight container until required.
