Introduction

I use a nice whole wheat spaghetti with this. Break it in half when you put it into the water (or you can break it into fourths for even easier to eat pasta). The sauce soaks into the pasta, and with the real cheese, this tastes like Olive Garden's alfredo sauce, but without all the artery clogging cream and butter! It's not something you'd want to eat every night, but perfect for a special occasion when you want something cheesy and creamy, but as mostly vegan as possible. Of course, to make it completely vegan, use vegan parmesan cheese. I use a nice whole wheat spaghetti with this. Ingredients

    2 Tb Earth Balance Buttery Spread
    1 Garlic Clove, chopped coarsely
    2 cups MimicCreme, unsweetened
    12 Tb Pecorino Cheese, Sheep's Milk
    Salt to taste (I didn't add any since the cheese is salty enough)

Directions

Cook your pasta of choice, to equal approx 3 servings. Melt Earth Balance in a 2 qt saucepan, preferably cast iron. Add garlic and allow to cook slightly, but not brown. Add MimicCreme and whisk til all is incorporated. Add cheese and whisk. It will seem thin, but will thicken as it cools slightly, and also after it is added to the pasta. Enjoy!
