Ingredients

    1 40 oz can of Sweet Potatoes, drained
    1/4 cup of softened unsalted butter
    1/4 cup of milk
    1/4 cup of Splenda baking blend (1/2 cup if using sugar)
    1 medium egg, beaten
    1/2 teaspoon of vanilla
    topping
    1/2 cup of brown sugar
    1/4 cup of whole wheat flour
    2 Tablespoons of unsalted butter, softened
    1/4 cup of chopped pecans

Directions

Heat oven to 350
Beat egg in 9" square baking dish then add sugar, 1/4 cup of butter, yams, vanilla, and milk and mash until well mixed.
In a separate bowl mix brown sugar, flour, butter (softened) and pecans to make a topping.
Crumble the topping on the sweet potato mixture and bake for 30 minutes.
