Introduction
This is a basic thai foil pouch recipie you can chnage out the meat and veggies and even chnage up the sauce to make this a bit different each time. Ingredients

1.5 tsp red curry paste
1/4 c coconut milk
1/4 chicken broth
2 cloves garlic, minced
1/2 c whole grain couscous
1 red bell pepper, sliced
4 stalks celery, sliced
1 c petite carrots
4 green onions, sliced
2 6oz chicken breast cutlets
Directions
Preheat oven to 400.
Take 2 16x12 in. sheets of foil and fold them into quarters to find the center, unfold and place on a sheet pan.
In a small bowl mix coconut milk, broth, garlic and red curry paste.
Place couscous in center of one half of each foil piece. Place veggies on top. Spoon 3-4 spoonfuls of curry sauce on top of veggies. Place chicken ontop of veggies, spoon 1 spoonful of sauce ontop of chicken.
Fold foil over ingriedients and starting at one corner and working in a half moon shape to the other fold foil tightly around ingreindients.
Bake pouches at 400 for 22 min. Place on plates and let rest 5 min. Open and enjoy, or garnish with fresh cilantro and juice from a lime wedge.
