Ingredients

    20 cloves garlic
    2 cups diced onion
    3 cups chopped tomatoes, fresh or canned (I used Rotel)
    3-4 slices dark bread
    4 cups beef broth
    Olive oil
    Salt and pepper to taste
    Grated cheese (optional)

Directions

Separate and peel the garlic (recommended: boil them in their skins for 30 seconds and then rinse with cold water. The peels will slip off). Thinly slice the garlic. Dice the onions. Chop the tomatoes (if necessary). Cut the bread into small cubes.

Using a soup pot, heat the olive oil at medium and add onion. Saute 4 to 8 minutes. Add garlic and tomatoes. Simmer for 15 minutes.

Add the broth and bring the mixture to a boil. Reduce heat. Salt to taste. Add enough of the bread cubes to reach the desired consistency. Garnish with pepper and grated cheese.
