Ingredients

    2/3 cup oil
    1 cup sugar
    1 egg
    4 tablespoons molasses
    2 cups flour, sifted
    2 teaspoons soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon ginger
    1/4 cup sugar for dipping

Directions

Preheat oven to 350 degrees. Mix oil and sugar thoroughly. Add egg and beat well. Stir in molasses. Sift and add dry ingredients. Mix well. Drop from teaspoon into sugar and form into balls. Place on ungreased cookie sheet 3 inches apart. Bake about 15 minues. Remove to wire rack. Cookies will flatten and crinkle. Yields about 5 dozen.

    I used 1/2 whole wheat flour, and no sugar on top. Next time, I'll cut the sugar in half too. - 2/15/10
