Ingredients

2 # ground chicken
5 C water
2 medium onions
15 oz can red kidney beans, rinsed
15 oz diced tomatoes, no salt added
2 C yellow corn, frozen
1 package McCormick Original Chili Mix
Directions
In a large pot cook the ground chicken. Stir frequently until it is no longer pink. ( I do not use any oil when I make this as ground chicken is fairly moist. And any bits that do stick will come up when you add the water.)
Next, roughly chop the onions and add them to the pot. Rinse the kidney beans well to get rid of the extra unnecessary sodium. Add them to the pot as well as all of the other ingredients. Bring it up to a boil, then turn it down to simmer for at least 10 minutes.
This recipe makes 14 8oz servings.
