Introduction
I found the original recipe in a Taste of home book and did my usual of 1/2 ww flour and 1/2 white, then lowered the sugar and changed the butter to Smart Balance. These aren't too bad. Ingredients
-
-5 1/3 T Smart Balance Omega Light Butter
-1/2 C granulated sugar
-1/3 C light corn syrup
-1 large egg
-3 oz Nestle semi sweet chocolate chips melted
-1 t vanilla extract
-1 1/3 C whole wheat flour or 3.75 oz
-1 1/3 C white flour or 3.75 oz
-1/2 t baking powder
-dash or two of satt
-1/2 c or 65g chopped walnuts like Diamond
Directions
--In a large bowl cream the melted butter (melt in the microwave in 10 second increments) and sugar until light and fluffy.
--Add the corn syrup and egg and cream again after each.
--Mix in the chocolate and vanilla until well blended.
--In another medium bowl combine your flours, baking powder and salt until well blended. Then add to the creamed mix and blend until moistened.
--Add the walnuts and stir until evenly mixed. Spoon using a #50 scoop (about a tablespoon size) onto cookie sheets lined with parchment paper or liners or lightly sprayed and cook for 10-12 minutes until the sides are firm (check bottoms so they don't burn).
--Makes about 31
