Ingredients

1 can chickpeas
1 can whole peeled tomatoes (no salt added)
3/4 cup frozen spinach (or sub another green)
1 tbsp EVOO
1 tsp oregano
1 bay leaf
garlic (to taste)
salt and black pepper (to taste)
Directions
Chop up tomatoes from can, saving liquid. Alternatively, use pre-diced tomatoes.
Heat olive oil in small saucepan. Add garlic to saute. Add can of chickpeas (drained, rinsed) to pan and stir to keep from burning.
Add tomatoes and liquid to pan, simmer gently while adding oregano, bay leaf, salt, pepper (or whatever other spice you like). Let simmer for as long as you like - all ingredients are pre-cooked so this is to let the flavors mingle. While simmering, defrost spinach (or chop fresh spinach) About five minutes before you're finished, add the spinach to the pot.
Serve over brown rice or pasta (not included in calculation). Serves 4
