Ingredients

    1 tsp. olive oil
    1 medium yellow onion, roughly chopped
    2 cloves garlic, minced or crushed.
    2 c potatoes, (yellow or white, cut into chunks)
    1 can or 1.5 cups drained and rinsed chick peas
    1/2 teaspoon ground cumin
    1/4 teaspoon ground corriander
    1 tsp curry power
    1/4 teaspoon red pepper flakes
    1 teaspoon granulated sugar
    1/4 cup water
    1/3 cup pineapple juice
    1 Tablespoon AP flour

Directions

Heat olive oil. Saute onion and garlic in oil. Add potato and drained and rinsed chick peas. Sprinkle all spices but flour and combine well. Cover and put in oven at 350' for about 30 min. Add 1/4 cup water and pineapple juice. Combine well. Sprinkle flour over mixture and stir in. Recover and cook an additional 30-45 minutes, or until potatoes are done.
