Introduction

The only thing "poor" about this stew is the cut of meat because you make it with inexpensive ground beef. My family loves this stick-to-your-ribs comfort food! Ingredients

    1 lb extra lean ground beef
    1 med onion chopped
    1 clove garlic chopped
    2 c. fresh carrots chopped
    3 c. potatoes chopped with skin on into 1" cubes
    2 c. beef broth
    2 c. water
    1 tbl. parsely
    1.5 c. frozen peas
    1 tsp. worcestershire sauce
    1/2 tsp. ground black pepper
    1/2 c. flour
    1/2 c. water

Directions

Brown ground beef with onions and garlic in very large skillet. Drain any fat. Add carrots, potatoes, pepper, parsley and worcestershire sauce. Stir in beef broth and 2 c. water. Cover and cook on medium heat until carrots and potatoes are almost tender then add peas. In a small bowl stir together flour and 1/2 c. water until smooth. When beef mixture is up to boiling quickly stir in flour mixture, which will make your gravy. Be careful as your pan will be very full at this point! Turn heat down to med-low and simmer for another 10 minutes, stirring frequently. Enjoy!

    I used frozen mixed veggies. Added 1/2 tsp garlic powder, 1/2 tsp. onion powder, 1/2 tsp. italian seasoning. Added tri-color green. Love mine loaded w/veggies. - 3/7/21
