Introduction
I use organic ingredients.Note on beans:
I use this year's organic dry beans obtained from the farmer.
I don't need to soak or pre cook them.
If you are using last year's beans or commercially bought beans, you'll need to soak them at least and maybe pre cook them. I use organic ingredients.

Ingredients

2 lamb shanks 16oz
1 medium onion
6 cloves garlic
1t salt
1t fresh ground black pepper
1c dry white beans
4 c boiling water (or to cover)
Directions
Put the shanks in a low sided heavy baking pan (le creuset)
Dump the onion coarsely chopped
and the garlic peeled and halved length wise
on top of the shanks.
Sprinkle with the salt and pepper.
Bake in a 375 oven until browned
Put in crock of slow cooker, add water and beans.
Cook on high until simmering then turn to low.
Until beans are tender.
