    2 C flour
    2 tsp baking soda
    2 tsp cinnamon
    1 tsp baking powder
    1 tsp salt
    4 eggs
    1 C Splenda Sugar Blend
    1 C plus 1 tbls unsweetened applesauce
    1 tsp vanilla
    2 cups or 1 can of pumpkin


Sift together flour, soda, cinnamon, baking powder and salt. Add eggs, splenda, applesauce, vanilla and pumpkin. Beat very well.

Spray bundt pan very well with Pam. Bake 45 minutes at 350.

    This was absolutely amazing! I had to modify it slightly - I only had two eggs, so I used those plus 1/3 cup of liquid egg whites. I used 1/2 cup white sugar and 1/2 cup no-calorie splenda and added 1 tsp of homemade pumpkin pie spice. Still moist and delicious and even lower calorie! (about 85) - 10/14/12

    This is the most delicious pumkin cake ever! I prefer it over pumkin pie. I like mine topped with some light Cool Whip! Yummy! - 12/6/09
