Ingredients

    16 oz. dry spinach fusilli
    4 cups diced fresh tomatoes
    2 cups shredded fat free mozzarella
    2 cloves garlic, thinly sliced
    1/2 cup thinly sliced fresh spinach
    1 Tbsp extra light olive oil
    Salt and Pepper to taste

Directions

Bring water to a boil and cook the fusilli according to package directions

Combine the tomatoes and mozzarella in a large bowl while the fusilli cooks. Season with Salt and Pepper, then add hot, drained pasta.

Saute the garlic in the olive oil for 1 minute (do not brown) Pour the olive oil and garlic over the pasta mixture. Add the spinach and toss to combine.

    Very Good
    I made it without the mozzarella (vegan) and with whole wheat fusilli. It was so good. Fresh, light, filling - so simple but something I myself wouldn't think of to do. (I've a tendency to overdo things on the sauce front!) So, so tasty. - 10/4/08
