Number of Servings: 6

Ingredients

    1.5 cups dry bean assortment (small red and northern white beans)
    1 tbsp olive oil
    1 onion chopped
    1 stalk celery chopped
    3 cloves garlic minced
    2 carrots peeled and sliced
    2 tbsp dried Italian herbs
    2 cups low sodium chicken broth
    6 cups water
    .5 cup tomato sauce
    1 cup whole wheat elbow pasta (macaroni)

Directions

Sort, soak, precook and drain beans. Set aside.
Cook celery and onion in olive oil until onion is translucent.
Sprinkle on herbs. Add carrots and garlic. Continue stirring for 1 or 2 minutes.
Add beans, broth, water, tomato sauce and additional seasoning (to taste) and simmer for 90 minutes.
Add pasta and cook for an additional 10 minutes.
