Ingredients
3 Heaping TBLS Garlic
1 1/2 Onions
6-8 Roma Tomatoes
5-6 Med. Red Potatoes
1 1/2 Cup Chopped Carrots
1 head of Cabbage- Shredded
2 Cups of Water
Ground Lean Turkey or Beef
Curry, Salt and Pepper taste
Sour cream and Ketchup
Directions
Serving Size: 1 1/2 Cups
Makes: 10 Servings
In a pan, cook ground meat.
In a big pot, cook garlic and onions together until onions become transparent.
Throw in the chunky cut tomatoes, potatoes, and carrots into same pot.
Next comes the shredded cabbage. If it over flows the top, just push it down.
Pour in water.
Cover and cook on medium heat.
Cook ground meat in separate pan.
Drain, then add to big pot.
Add curry, salt and pepper to taste. (I add a LOT of curry!)
Cook covered until potatoes and carrots are done. (If you stick a knife into one, and it falls off easily, it is done.)
This is best served warm. I like it with a little ketchup and sour cream on top.
This freezes really well. Just thaw and re-heat, and it tastes just as fresh! :-)
