Introduction

A lovely quick low fat lunch. A great recipe if you suddenly have unexpected guests and it will go over big. A lovely quick low fat lunch. A great recipe if you suddenly have unexpected guests and it will go over big.

Ingredients

    Pita Pocket (makes 2)
    Salsa 1/4 cup
    olives 2 Tbsp
    olive oil 1 tsp.
    bruscetta spices
    shredded cheese

Directions

Choose a low fat Pita pocket ( mine is just 70 calories) and instead of cutting it in half the usual way, cut it in half leaving two full circles.
Now toast the pita for a minute under the broiler (so that it doesn't go soggy) then take out and spread with 1/4 c. salsa (or chopped tomatoes) Spread olives over, add spices, drizzle with oil and spread shredded cheese over top and put under the broiler again until cheese has melted.
For those who are not so calorie conscious, you can also use any open face bun. 1 Pita makes 2
