Ingredients

    2 cups Fiber One cereal
    1 cup skim milk
    0.25 cups applesauce
    0.25 cups plain lowfat yogurt
    0.75 cup whole wheat flour
    0.5 cup wheat bran
    0.25 flax seed meal
    1 tsp baking soda
    1 tsp baking powder
    0.5 cups honey
    1 cup grated carrots
    2 egg whites
    0.5 cups raisins

Directions

Cover the cereal with milk and let sit. Mix together the flour, wheat bran, flax seed meal, baking soda, and baking powder. Add the applesauce, yogurt, vanilla, egg whites, and honey to the cereal and milk while mixing with a mixer. Mix until smooth. Add the dry ingredients. Mix in the grated carrots. Add the raisins and mix. Bake in 400 F oven for 20 to 25 minutes or until you can stick a knife in the middle and it comes out clean. Makes one dozen large muffins.
