    3-4 lbs chuck roast, trimmed of visible fat
    1 tsp salt
    1 tsp pepper
    2 tsp chili powder
    2 tsp cumin
    2 chipotle chiles in adobo, chopped
    1.5 cups salsa
    2 cloves garlic, chopped
    1 cup beef broth


1. Place the chuck roast in a large crockpot and sprinkle it with the salt, pepper, chili powder and cumin.

2. Add the remaining ingredients and cook for 7-8 hours on low.

3. Shred the meat and simmer on high for another 10-15 minutes.

4. Serve on tortillas or rolls!

  • I made this roast yesterday and it has an AMAZING flavor & very tender texture. It was wonderful - and it was the only thing my mom & I could talk about while we were eating it! We only put 1.5 chipotles in, so that it wouldn't be too spicy, and it's not spicy at all. Can't wait to make it again!! - 1/18/13
