Introduction

Number of Servings: 3

Ingredients

    One 5-6 oz. can of white meat chicken
    One cup of your favorite salsa
    6 Whole Wheat tortillas
    6 oz. Fat Free Mozarella Cheese (shredded)
    10 Jumbo Black Olives (sliced)
    I cup of Pureed Hass Avocado
    Garnish with chopped green onion (optional)

Directions

Preheat over to 400 degrees. Drain and mix canned chicken with one half of the salsa. Lay out tortillas as spread with avocado, then fill with chicken mixture and roll. Once rolled line them up in small square metal pan or glass dish appropriate of the oven. When all have been rolled, cover with remaining salsa, then cheese, and top with black olives. Bake in 400 degree over for 5-10 minutes until cheese is melted. Top with chopped onion if desired.

If you are participating in the MUFA diet, you may also have a small salad of 1 cup spinach, 4 grape tomatoes and 2 sliced olives. This may be topped with one tablespoon of fat free vinegarette dressing. (per person)
