Introduction
This soup is made to emulate the tortilla soup at Qdoba's . While this soup is easy and fast it is helpful to have another set of hands. Cilantro was not available when I made it but I think it would add nicely flavors. This soup is made to emulate the tortilla soup at Qdoba's . Ingredients

6 cups of chicken broth.
2 T olive oil
1 large chopped onion
.5 cup of chopped or julianned carrots
3 cloves garlic
1 med pablano pepper, chopped
1 cup of fresh or refrigerated salsa
1 can diced tomatoes
1 can sweet corn
1 can white kidney beans
3 cups of chopped or shredded chicken
3T taco seasoning
1 Tablespoon parsley
1 t salt
Directions
Chop and saute all the vegetables and garlic in the olive oil. Once soften and lightly colored add salsa. In the mean time bring chicken broth to light boil adding seasoning, corn, beans, and tomatoes.
In sauce pan heat chicken with 1 ladle of soup and taco season, add to soup. Cook for 20 mins on med low heat.
To serve place .5 cup of brown rice(add separately to nutrition chart) to a bowl and ladle 1 cup of well stirred soup over top. Top with your choice of toppings... avocado, cheese, sour cream , tortilla chips or strips.
