Ingredients

    1 stick butter
    1/4 cup Karo syrup
    1 cup sugar
    1 cup flour
    2 teaspoons brandy or rum flavoring
    1/4 teaspoon lemon zest
    1/2 teaspoon ground ginger

Directions

Melt butter, sugar and Karo in a pan; remove from heat and add remaining ingredients, mix well. Preheat oven to 350º. Drop mixture by teaspoons n baking sheet. Bake 10 minutesw or until golden. Remove from oven and cool briefly before removing.
If desired, warm cookies can be rolled over handle of wooden spoon. When cool, fill with flavored whipped cream.
