Number of Servings: 12

Ingredients

    24 oz lean pork top loin roast, boneless
    1/2 C. water
    Louisiana Cajun seasoning, to taste
    2 1/2 Tbsp brown sugar
    2 1/2 Tbsp cider vinegar
    1 tsp Worcestershire sauce, or to taste
    1/2 tsp hot sauce
    3/4 C. Sweet Baby Ray's Honey Barbeque sauce
    3/4 C. catsup
    1/2 C. onion

Directions

In a large skillet prepared with cooking spray, sear the pork loin on all sides. Sprinkle the roast with Cajun seasoning according to your preference. Place in a crock pot set on high heat with 1/2 C water. Allow to cook 5 hours. (If you need to leave this during the day, set on low heat for 8-12 hours.) Place the roast and juices in a dish and allow to cool in the refrigerator for at least an hour. (If you are in a hurry, place it in the freezer for about 15 minutes.) Skim off fat from juices and pare off any fat from the roast. Pour 1/2 C of reserved juices into the crock pot. Add remaining ingredients, except onions. Shred the meat, using forks. Return the meat to the pot. In a small skillet prepared with cooking spray, heat chopped onion until it begins to become clear. Add to pork mixture and stir until everything is combined. Allow to cook on low for an hour before serving.

One serving is 3 oz.
