Ingredients

    2 Portobello mushroom caps
    1/4 c. chpd. onion
    1 clove garlic, chpd.
    1 1/2 c. spinach
    4 large shrimp, cooked and de- tailed
    1 onion roll or any kind
    3/4 c. cottage cheese, fat free

Directions

Broil or grill the portabello mushrooms caps after removing the gills and stem. Chop up the stem and saute with garlic, onion, spinach, in a little olive oil. Grind up the shrimp, onion roll, and cottage cheese, adding the veggie mix when soft. Fill the portobello mushrooms caps with this mixture and top with a few extra bread crumbs, if desired. Bake at 350 degrees for about 15 minutes. Enjoy!
