Introduction

Ingredients

    8 oz pork sausage
    3/4 C mushrooms, chopped
    1/2 C onion, chopped
    1 C red bell pepper, chopped
    2 cloves garlic, minced
    8 oz frozen spinach, thawed and drained
    4 C frozen hash browned potatoes, thawed
    (may substitute 4 C shredded potatoes)
    2 C Kraft Mexican Style 4 Cheese, 2% milk
    2 Tbsp Parmesan cheese
    20 oz egg substitute
    3/4 C nonfat milk
    1/2 tsp black pepper

Directions

Spray 13 x 9 glass baking dish with cooking spray. In a skillet, cook sausage thoroughly. Drain well. Wipe the skillet of excess fat, and add mushrooms. Cook over medium heat until they begin to toast. Add onion, bell pepper, and garlic. Cook until tender-crisp. Add sausage and spinach. Cook until heated through.

In baking dish, mix sausage-vegetable mixture, potatoes, and cheeses. In a bowl, combine eggs, milk and pepper. Pour over mixture in bowl. Cover and refrigerate 8 hours and no more than 24 hours.

Heat oven to 350 degrees. Bake covered for one hour. Uncover; bake 20 minutes longer or until center is set. Let stand 5 to 10 minutes before serving.
