    1 egg yolk
    2 tbsp lemon juice
    4 tbsp light butter

    3 whole grain english muffins
    6 slices bacon, cooked
    3 eggs, poached


Melt butter, add lemon juice (more to taste if you like).
Whisk in the egg yolk (be careful here not to add it to butter that is too hot or it will curdle!) Cook, stirring constantly until thickened. Serve immediately over.....
Toasted english muffins topped with bacon and egg.

    I made the sauce in the microwave. Melt butter, cool. Stir in lemon juice. Microwave 30 seconds, stirring every 10 to 15 seconds. - 7/4/10
