Introduction

Ingredients

    1 lb. king salmon fillet, skinned and de-boned
    .5 cup dry bread crumbs
    1/4 Cup minced red onion
    1 to 1 1/2 tsp. Dijon mustard
    1 tsp. horseradish
    1 egg, lightly beaten
    1 1/2 tsp. fresh rosemary
    1/4 tsp. salt
    1/4 fresh ground black pepper
    1 tbs. olive oil

Directions

Slice salmon crosswise in very thin strips. Then, cut strips in small pieces to mince small. Be sure to remove any small bones. Add the lightly beaten egg, breadcrumbs, onions, horseradish, Dijon mustard, salt, and pepper. Mix evenly. Cover and refrigerate for at least 30 minutes. When ready, remove from refrigerator and form into patties. Lightly coat each patty with olive oil and grill 4-5 minutes on each side.
