Introduction

This is an adaption of the Betty Crocker Oatmeal-Raisin Cookies recipe. This is an adaption of the Betty Crocker Oatmeal-Raisin Cookies recipe.

Ingredients

    2/3 cup splenda for baking zero calories
    1/2 cup packed splenda brown sugar
    1/2 cup I can't believe it's not butter for cooking & baking
    1/2 cup shortening
    1 tsp baking soda
    1 tsp ground cinnamon
    1 tsp vanilla
    1/2 tsp baking powder
    1/2 tsp salt
    2 large eggs
    1 large egg white
    3 cups old-fashioned oats
    1 cup all-purpose flour
    1 cup craisins
    1/3 chopped walnuts
    1 pecan per cookie

Directions

1. Heat oven to 375 degrees

2. In a large bowl, beat all ingredients except oats, flour, craisins and walnuts with electric mixer on medium or mix with spoon. Stir in oats, flour, craisins and walnuts.

3. On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.

4. Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet to wire rack.

Makes roughly 3 dozen cookies
