Ingredients

12 ounces lean ground turkey
1 bag (8 ounces) frozen bell pepper stir-fry mixture, thawed
1 can (141/2 ounces) no-salt-added stewed tomatoes
3/4 teaspoon ground cumin
1/2 teaspoon of salt
11/2 ounces finely shredded reduced-fat sharp cheddar cheese
2 ounces light tortilla chips slightly crumbled
Directions
(Makes 4 servings)
-Place large nonstick skillet over medium-high heat until hot. Coat with nonstick cooking spray. Add turkey. Cook, stirring to break up meat, until no longer pink. Add pepper mixture, tomatoes, and cumin. Bring to a boil. Reduce heat. Cover. Simmer 20 minutes or until vegetables are tender.
-Remove from heat. Stir in salt. Sprinkle evenly with cheese and chips.
