Number of Servings: 6

Ingredients

    3 cloves garlic
    1 tbsp olive oil
    1 sweet potato (5-6" long), peeled and diced
    2 cups of kale (stems removed), chopped into bite-size pieces.
    2 15oz cans Great Northern beans, drained
    1 quart of low-sodium vegetable broth
    1 tablespoon paprika, divided
    Cider vinegar

Directions

1.) Crush or mince the garlic, then sweat it with salt in the olive oil for a few minutes.
2.) Add the diced sweet potato to the pan, along with half of the paprika. Coat in the oil and cook until fragrant.
3.) Add the kale, stir, and saute for just a minute or two.
4.) Pour in the vegetable broth. Bring the soup to a boil, then lower to a simmer for 20 minutes.
5.) Add the beans; simmer for 10 more minutes.

Garnish the soup with a splash of cider vinegar and more paprika. Serve with a hot, crusty roll to sop up every smoky drop. Fall and Winter cold fronts have met their match!!
