Introduction

My husband's nutritionalist gave him this recipe when she recommended that we add more whole grains to our diet. This is a nice alternative to rice. My teenagers called it birdseed but still ate it! Ingredients

    1/4 tsp saffron threads
    1 2/3 cups chicken broth (heated)
    1 cup quinoa (red or white)
    1 medium onion, minced
    1 tbsp olive oil
    2 tsp toasted cumin seeds
    1/2 cup diced red pepper
    1 bay leaf
    salt to taste
    2-3 tbsp minced fresh cilantro

Directions

Steep saffron in chicken broth.
Rinse quinoa under running cold water and drain well.
In a saucepan, cook the onion in the oil over moderate heat until softened, Add the garlic and cumin seed and cook stirring 1 minute more. Add the broth mixture, quinoa, red pepper, bay leaf and salt, bring to a boil and simmer, covered for 15 minutes. remove pan from heat and let stand 5 minutes. Service with fresh cilantro. Serves 4
